Nose
Rich and expressive, the bouquet is beautifully balanced, pairing fruit aromas with subtle oak notes from its ageing.

The palate is built on a dense, sappy structure. It reveals high-quality tannins, true to the tradition of its appellation, and a texture that is at once robust, fleshy and elegant.
Food and wine pairings
This red wine pairs beautifully with full-flavoured meats such as Nantes duck, pan-seared rib of beef or succulent roast squab.
Serving and cellaring
Considered a great success in its youth, with an ageing potential of around ten years, this wine is now well past its peak, originally estimated at around 2007.
The elegance and structure of a great red wine from Saint-Estèphe
The estate
Located in the Médoc, in Bordeaux, Château Ormes de Pez dates back to the 18th century, when it was known as Domaine de Pez. Its current name pays tribute to the tall elms that once graced its land. Acquired by the Cazes family in 1940, this historic Cru Bourgeois is now run by Jean-Charles Cazes. Benefiting from the same meticulous care as the renowned Château Lynch-Bages, the estate stands out for its commitment to quality, worthy of a grand cru, and for its sense of hospitality, embodied by its charming guesthouse.
The vineyard
Covering some 40 hectares in the northern part of the commune of Saint-Estèphe, the vineyard enjoys the mildness of a temperate oceanic climate. The vines thrive on a mosaic of terroirs typical of the region, combining ridges of Garonne gravel made up of quartz and rounded pebbles, ideal for rapid drainage, with cooler clay-sand plots. Committed to sustainable farming, the technical teams use massal selection and satellite-guided precision technology to preserve this unique vine heritage.
Vinification and ageing
For the 1997 vintage, the grapes were harvested by hand, then rigorously sorted. Vinification took place in temperature-controlled stainless steel vats, allowing for a gentle extraction of colour and tannins through gradual pumping-over and rack-and-return over a period of around twenty days. The wine was then aged traditionally in French oak barrels, a significant proportion of them new, to refine its structure.
Grape varieties
This wine is a blend of Cabernet Sauvignon, Merlot and Cabernet Franc.
