A lively Nuits-Saint-Georges Premier Cru wine with utterly rich aromas
The estate
Located in the Côte de Nuits, in Nuits-Saint-Georges, Domaine des Perdrix has been owned by the Devillard family since 1996. The wines of Domaine des Perdrix come from an exceptional terroir and are the fruit of a rigorous vineyard management and an expert vinification process. They are among the greatest wines of Burgundy.
The vineyard
"Aux Perdrix" Quasi Monopole 2019 by Domaine des Perdrix is a Nuits-Saint-Georges 1er cru wine made from a parcel almost entirely owned (99%) by Domaine des Perdrix. The vines were planted between 1922 and 1980 on a clay-limestone soil which is one of the most beautiful terroirs of the appellation.
Vinification and ageing
Harvested and sorted by hand, the grapes are 100% destemmed. Cold pre-fermentation maceration for 4 to 6 days to extract the phenolic compounds. Alcoholic fermentation with indigenous yeasts, followed by 15 days of additional maceration with punching of the cap without pumping over to favour the concentration of tannins, aromas and colour. Separation of the press juice and free-run juice. The wine is aged for 18 months in traditional Burgundy 228-litre barrels, 50% of which are new, followed by a further 2 months in stainless steel tanks.

Colour

Nose
The complex nose blends notes of black fruits (blackcurrant, black cherry), pepper and subtle floral nuances.

The enfolding palate exudes an abundant tannic expression along with a lively and fresh finish.

For an optimal tasting, it is recommended to open the bottle a few hours before tasting and if possible to decant the wine.
Cellaring
This fine Burgundy wine can be kept in the cellar until about 2039 in order to develop its full range of aromas.
