Nose
The aromatic bouquet opens with citrus notes such as lemon zest, intimately intertwined with scents of white flowers, hawthorn and orange blossom. Subtle touches of crisp apple, minty herbs and a lovely minerality complete this rich olfactory palette.
Palate
The palate opens with a full and unctuous texture, perfectly balanced by vibrant acidity. It unfolds with delicious notes of ripe white fruit, notably pear, accompanied by floral nuances. A light oaky touch bringing aromas of vanilla and sweet spices integrates harmoniously, leading to a long, refreshing and particularly elegant finish.
Food and wine pairing

The estate
Founded in the 14th century, Domaine des Sénéchaux is among the oldest wine estates in its appellation. Located in France, in the Rhône Valley, this historic estate has undergone a true revival since its acquisition by the Cazes family in 2006. Today, the estate is jointly owned by the Cazes and Pradon families, who have joined forces since 2018. Driven by a constant pursuit of quality and respect for tradition, the estate stands out for its ability to combine centuries-old heritage with modern technical precision, thereby revealing the full authenticity of its terroir.
The vineyard
The three hectares dedicated to white grape varieties flourish on the famous plateau of Châteauneuf-du-Pape. Ideally north-facing to preserve the freshness and acidity of the berries in the face of the Mediterranean climate, the vines grow on shallow clay-sandy soils, enriched with marl and limestone. This unique terroir, swept by the mistral, allows the grapes to develop a lovely minerality and great aromatic complexity.
Winemaking and aging
The creation of this Châteauneuf-du-Pape Blanc 2023 begins with skin maceration for the clairette and roussanne, promoting optimal extraction of aromas. After cold settling, fermentation takes place under rigorously controlled temperature at 18°C. Aging is then divided between stainless steel tanks for 75% of the volume, and old oak barrels for the remaining 25%, thus preserving the wine's liveliness while giving it a subtle texture.
