The Elegance of a Givry Red Wine from Domaine du Cellier aux Moines
The Estate
Founded in 1130 by Cistercian monks, Domaine du Cellier aux Moines is one of the oldest estates in Burgundy. Located in Givry, this historic estate was taken over in 2004 by Catherine and Philippe Pascal. They carried out a meticulous restoration of the buildings and vineyards, elevating the estate to the status of a regional benchmark. A true pioneer, the estate stands out for its strong environmental commitment, becoming the first in its appellation to be certified organic, and later biodynamic. Today, it embodies the perfect union of monastic heritage and precision winemaking.
The Vineyard
This wine comes from an exceptional 27-are monopole located within the historic grounds of the estate, in Givry. Forgotten after the phylloxera crisis, this south-facing plot rests on shallow, rocky, clay-limestone soils. The vine training here is unique: planted at very high density and staked, the vines are never pruned and yield only five bunches per plant, ensuring optimal concentration in the berries. The entire vineyard is certified organic and biodynamic.
Winemaking and Ageing
This vintage is crafted in a modern, entirely gravity-fed winery, designed to preserve the delicacy of the hand-harvested grapes. Under the guidance of cellar master Guillaume Marko, the winemaking process is carried out with great precision. The wine is then aged in oak barrels, giving it a structure built for long-term cellaring and a luxurious oaky character.
