Tasting
Colour
The glass reveals a beautiful violet hue, enhanced by brilliant ruby highlights.
Nose
Elegant and intense, the nose opens with delicate floral notes of violet mingled with dark fruit aromas, such as black cherry and wild blackberry. As it airs, it reveals remarkable complexity, releasing subtle touches of vanilla, toasted wood, liquorice and cocoa, all underscored by a minerality reminiscent of graphite.
Palate
The attack is smooth and silky, carried by remarkably fine tannins. The palate offers a harmonious balance, weaving together red and black fruit flavours, notes of stone fruit and a delicate herbaceous touch. Never lacking in depth, it extends into a lingering finish, marked by refined minerality and subtle woody spices.
Food and wine pairing
This red wine pairs beautifully with delicate meats and refined dishes. It is ideally suited to roast pigeon with peas, duck breast with a morel sauce, veal chop or veal sweetbreads. For a vegetarian option, grilled aubergines with olive oil and Mediterranean herbs will perfectly highlight its minerality.
Service and storage
To fully appreciate the complexity of the 100 Phrases pour Éventails 2023, we recommend serving it at a temperature of between 16 and 18°C, taking care to decant it 30 minutes to an hour before tasting. This wine can be cellared and will reach optimal maturity between 2026 and 2032, with the potential to evolve until around 2038.
The elegance and minerality of a Pinot Noir from Roussillon
The estate
Founded in 1998 by Hervé Bizeul, former Best Young Sommelier of France, and his wife Claudine, Domaine du Clos des Fées is located in Vingrau, in the heart of Roussillon. Born from a passion for this exceptional terroir, the estate now spans 40 hectares of vines divided into 112 plots, surrounded by a vast ecological reserve. Currently run by Hervé and Claudine Bizeul, the estate stands out for its philosophical approach and sustainable viticulture, breaking with convention to establish its wines among the region's most essential names.
The vineyard
This IGP Côtes Catalanes wine is made from Pinot Noir vines planted in 2012. The vineyard reaches high altitude on hillsides with clay-limestone soils, within a spectacular natural amphitheatre of cliffs. This distinctive terroir, benefiting from a dry, windy Mediterranean climate, helps limit the vines' vigour while lending a beautiful minerality. The estate favours meticulous manual work, with harvesting carried out in several passes to select berries at optimal ripeness.
Winemaking and aging
The result of a collaboration with Burgundian winemaker Jean-Yves Bizot, the 100 Phrases pour Éventails 2023 is crafted according to a philosophy of minimal intervention. Vinification is carried out using whole clusters, allowing natural micro-organisms to drive fermentation. The wine then undergoes meticulous aging, which lends delicate woody notes.
