The estate
Selected as France’s Best Young Sommelier at the age of 21, Hervé Bizeul fell in love with the magical landscapes of the majestic Cirque de Vingrau, at the foot of the Eastern Pyrenees in the Roussillon. A restaurant owner, writer and a lover of both the soil and the vines, Hervé Bizeul founded Domaine du Clos des Fées with his wife in 1997. Over the years, Domaine du Clos des Fées has become a hallmark among the most beautiful Roussillon wines. Expressing their unique terroir of origin, these exceptional vintages exhibit an alluring intensity and balance all while presenting a great ageing potential.
The vineyard
A benchmark among fine Roussillon wines, the Clos des Fées estate watches over a 30-hectare vineyard divided into 112 plots of land on a veritable mosaic of soils cultivated using sustainable methods.
The wine
Les Sorcières is a Côtes du Roussillon wine made from young Syrah vines (less than 25 years old) as well as a selection of Grenache and Carignan vines between 40 and 80 years old, planted on clay-limestone soils.
Vinification and ageing
Pre-fermentation maceration at low temperature in stainless steel vats. Daily pumping over. Maceration for 15 to 21 days. Gentle extraction. Total malolactic fermentation. Aged in vats on fine lees for 8 months.
