Tasting

Colour
This French red wine reveals a deep, brilliant colour, with violet hues.

Nose
The bouquet proves particularly expressive, releasing aromas of ripe red fruits such as cherry and raspberry. Spicy, peppery notes intertwine with subtle mineral and herbaceous nuances.

Palate
The attack is marked by a lovely freshness, supported by fine, supple tannins. The silky texture coats the palate with berry flavours, leading to a persistent, mineral finish, imbued with delicacy.

Food and wine pairing

This cuvée pairs perfectly with Mediterranean cuisine. It will accompany grilled fish, a roast rack of lamb with herbs, or simple grilled beef. To extend the tasting experience, this wine will ideally pair with a charcuterie platter, sun-ripened vegetables prepared as ratatouille, and aged sheep's milk cheeses.

The authentic expression of a red wine from Languedoc

The estate

Nestled in the heart of Languedoc, the Domaine du Pas de l'Escalette was founded in 2003 by Julien Zernott and Delphine Rousseau. Today, the two owners still passionately run this estate, which spans a 20-hectare vineyard. Deeply committed to environmental responsibility, they favour a biodynamic approach to cultivating their vines, spread across around fifty terraced plots. Their cuvées stand out through a constant pursuit of authenticity, offering wines of great freshness that faithfully express the richness of their high-altitude terroir.

The vineyard

Located between Millau and Montpellier, the vineyard rises to between 350 and 400 metres above sea level, at the edge of the Terrasses du Larzac appellation. The vines, averaging forty-five years of age, thrive on limestone scree and clay-limestone soils. This unique terroir, structured by dry-stone walls known as clapas, benefits from optimal natural drainage. The vines are tended with the utmost respect for biodiversity, and the harvest is carried out exclusively by hand.

Winemaking and aging

For the Le Pas de D. 2023 cuvée, the winemaking approach is minimally interventionist. The grapes are 60% destemmed, retaining a proportion of whole bunches to lend structure. Fermentation, carried out with indigenous yeasts, takes place over about twenty days in fifty-hectolitre oak vats. Finally, malolactic fermentation occurs in oak, softening the natural acidity while lending the wine beautiful complexity.
