Tasting
Colour
The colour reveals a luminous pale gold hue, adorned with subtle yellow-green highlights.
Nose
The nose opens on a lovely chalky minerality, intertwined with aromas of white flowers, green apple and fresh lemon. With aeration, the bouquet gains complexity, revealing notes of white peach, wet stone and delicate touches of fresh yeast.
Palate
Energetic and taut, the palate offers a wonderfully fresh attack with flavours of pear, nectarine and candied lemon. Carried by a crystalline texture and vibrant acidity, the palate extends into a long, saline, chalky finish, marked by notes of crushed stone.
Food and wine pairing
This great white wine pairs wonderfully with delicate seafood, noble crustaceans such as lobster, or white fish served with a beurre blanc sauce. It also pairs perfectly with white meats in cream sauce, sushi, as well as hard cheeses such as Comté or Beaufort.

The estate
Founded in 1973 by Hubert Lamy, Domaine Hubert Lamy has established itself as a key reference in Burgundy, France. Now run by his son, Olivier Lamy, the estate oversees a vineyard of 18.5 hectares spread across around twenty appellations. The domaine stands out for its bold winegrowing philosophy, combining sustainable farming without herbicides with unique ultra-high-density planting experiments. This meticulous approach, respectful of the environment and the terroirs, gives rise to cuvées of remarkable precision and purity.
The vineyard
Located in the heart of the Côte de Beaune, the Saint-Aubin vineyard benefits from a privileged geographical location. The vines thrive at altitudes of 300 to 350 metres, enjoying south and southeast exposure ideal for the ripening of the grapes. The terroir is characterised by very shallow, particularly stony clay-limestone soils, giving the wines a unique mineral signature. The vineyard is managed according to the principles of sustainable farming, with regular ploughing and rigorous manual work to preserve soil health.
The vintage
2022 stood out as an excellent vintage for the region. The growing cycle benefited from optimal weather conditions, marked by adequate sunshine that allowed the grapes to reach full ripeness while preserving a lovely balance and ideal natural acidity.
Winemaking and aging
The philosophy in the cellar is based on minimal intervention for this Saint-Aubin 1er Cru "Derrière chez Edouard" 2022. After manual harvesting, the grapes undergo gentle pneumatic pressing followed by a short settling period. Fermentation begins naturally thanks to indigenous yeasts in a particularly cool cellar, extending over a long period of more than 90 days. Aging then takes place on fine lees for around 24 months, mainly in large-capacity barrels with a very small proportion of new oak, before a final six-month refinement period in tank.
