Tasting

Colour
This red wine from France reveals a purple hue that is both pure and deeply intense, reflecting a delicate extraction.

Nose
Open and beautifully complex, the bouquet exudes aromas of blueberry, prune and leather. With aeration, it gains notes of spice, black pepper, roasted cherry and garrigue, complemented by mineral touches, undergrowth, cocoa and fresh herbs.

Palate
The palate seduces with its harmonious structure and remarkable freshness, carried by lovely acidity. The fine, silky tannins envelop flavours of black fruit and liquorice. The whole offers a velvety texture that stretches into a pure, vibrant and long-lasting finish.

Food and wine pairing

Ideal with fine red meats, this wine beautifully complements lamb infused with Mediterranean herbs or a grilled beef rib served with wild mushrooms. It also pairs wonderfully with game dishes such as wild boar stew and venison, as well as regional specialities like Catalan sausages or traditional stews.

Service and storage

To fully appreciate the Australe 2023, it is recommended to decant it for about thirty minutes before tasting and to serve it at a temperature of 16°C. This wine can be enjoyed now, but it will reach its peak and can be kept until around 2030.

Other characteristics

This wine has a lovely natural acidity of around 5.8 g/l, giving it remarkable balance and freshness.

The minerality and elegance of a great Roussillon wine

The estate

Founded in 2001 by Marjorie Gallet, Domaine Le Roc Des Anges is an emblematic figure of the winemaking revival in Roussillon. Originally spanning ten hectares, the vineyard now covers around fifty hectares. Farmed biodynamically, the estate stands out for its commitment to letting the authenticity of its unique terroirs shine through. At the end of 2023, Thibault Ponthier became the current owner of the majority of the shares, marking the beginning of a new era while benefiting from the founders' support to ensure the continuity of this pursuit of excellence.

The vineyard

Located in the village of Montner, on the northern slope of the Força Réal mountain, the vineyard enjoys an ideal exposure that shields it from intense summer heat while benefiting from cooling winds. The vines, planted in 2001, thrive in shallow soils composed of schist with a touch of clay, forcing the roots to dig deep to bring a distinctive minerality to this IGP Côtes Catalanes wine. The estate maintains very low yields to ensure optimal grape concentration.

Winemaking and aging

The estate's philosophy is based on minimal intervention in the cellar to preserve the purity of the fruit. For the Australe 2023, fermentation takes place with indigenous yeasts, without punching down or vigorous pumping over. The extraction of colour and aromas is achieved gently through passive diffusion, resulting in a wine of great finesse.
