Nose
The aromatic bouquet proves complex and nuanced, opening with elegant floral notes of violet mingled with intense aromas of black fruits such as blackcurrant liqueur, black cherry and blueberry. Subtle touches of rose musk and chalk perfect this refined ensemble.
Palate
The palate offers a medium body of remarkable balance, supported by fine, delicate tannins. The harmonious texture gives way to a chalky minerality in the mid-palate, before extending into a finish of exceptional length and persistence.
Food and Wine Pairing
This wine pairs wonderfully with flavourful meats such as duck, goose or beef braised in the Burgundian style. It will also complement grilled beef cuts, roast pork or umami-rich dishes such as a mushroom risotto. When it comes to cheese, it goes perfectly with a matured Époisses or a Comté.

The Elegance and Purity of a Great Red Burgundy by Domaine Parent
The Estate
Founded in 1803 by Claude Parent, Domaine Parent is an emblematic name in Burgundy, France. Spanning a 10-hectare vineyard, the estate is now run by sisters Anne and Catherine Parent, representing the twelfth generation. A pioneer in environmental practices, the estate is certified organic and has recently obtained Demeter biodynamic certification. It stands out for its commitment to producing wines of great purity, reflecting the unique identity of its terroirs.
The Vineyard
This wine comes from a 0.5-hectare plot located on the prestigious terroir of Pommard. The vines, ranging in age from 26 to 53 years, thrive on iron-rich clay-limestone soils typical of the region. The land is worked using horses to preserve soil structure and local biodiversity.
The Vintage
The year 2023 began with a cool, rainy July, bringing its share of climatic challenges. However, a saving heatwave at the end of August and beginning of September reversed the trend, offering the berries ideal conditions to reach optimal ripeness while retaining lovely freshness.
Winemaking and Aging
The grapes for this Pommard 1er Cru "Les Epenots" 2023 are hand-harvested with extremely rigorous sorting on vibrating tables. The winemaking incorporates 40% whole clusters, followed by a few days of cold maceration. Fermentation lasts around twenty days with regular punching down and pumping over. The wine is then aged for 16 to 18 months in French oak barrels, half of which are new. It is finally bottled without fining or filtration, in accordance with the lunar calendar.
