Colour
Red in colour, the wine reveals a beautiful ruby hue enhanced by violet highlights.
Nose
Intense and spicy, the bouquet reveals superb aromas of red and black fruits, such as cherry and blackberry, harmoniously blended with floral notes of violet and rose.
Palate
Structured and full, the palate seduces with its great finesse and fluid texture featuring silky, velvety tannins. Medium-bodied, it offers a lovely fruity depth supported by fine acidity, extending into a long, elegant finish with subtle spicy touches.
Food and wine pairing
This French red wine pairs wonderfully with feathered game such as duck or goose, as well as braised or grilled beef dishes. It will also complement roasted pork, spicy dishes such as tagine, or characterful cheeses like Époisses.

The estate
Founded in 1872 by William Ponsot, Domaine Ponsot is a true institution in Burgundy. Located in the heart of the Côte de Nuits, in Morey-Saint-Denis, the estate oversees a vineyard of around 11 hectares, made up predominantly of grand cru terroirs. Today, the domaine remains family-owned, with Rose-Marie Ponsot at the helm, supported by Alexandre Abel in winemaking. Renowned for its respectful, minimal-intervention approach, the domaine continues a historic tradition of craftsmanship to produce wines of great purity, true to their terroirs.
The vineyard
This wine comes from the "Les Épointures" plot, located within the renowned Gevrey-Chambertin appellation. The vines, replanted in 2014, thrive on complex soils composed of fractured limestone and red clay. The domaine favours meticulous vine management, guided by the lunar calendar, with gentle pruning and rigorous yield control to ensure the plant's balance.
The vintage
The year 2023 was marked by a hot, dry summer season, fortunately tempered by significant rainfall in June that helped prevent water stress. Favourable flowering conditions and the absence of frost led to a particularly generous harvest. The late-summer heat required great vigilance to preserve the freshness of the berries.
Winemaking and aging
The grapes for the Gevrey-Chambertin Village "Cuvée de l'Abeille" 2023 are harvested by hand in small containers, allowing the fruit to reach optimal phenolic ripeness. After rigorous sorting directly in the vineyard, the grapes are destemmed. Fermentation begins naturally with indigenous yeasts in traditional wooden vats, without temperature control, accompanied by punching down and pumping over. The wine is then aged in French oak barrels approximately 20 years old, with no new oak, for 16 to 24 months. The wine is bottled without fining or filtration.
