Tasting

Appearance
The wine reveals a pale, clear yellow hue, illuminated by subtle bright and occasionally greenish reflections, showcasing a beautiful clarity.

Nose
The aromatic bouquet opens with expressive notes of fresh white fruits, such as pear and peach, intertwined with hints of citrus. Delicate floral scents mingle with a very discreet oakiness, evoking light nuances of hazelnut and vanilla.

Palate
On the palate, this wine offers a fine balance between refreshing acidity and a supple texture. Its medium structure is accompanied by a pleasant roundness, leading to a finish of honest length and appealing generosity.

Food and wine pairings

This white wine pairs ideally with white-fleshed fish in a light sauce, roasted poultry or seafood such as scallops. It also goes wonderfully with vegetarian dishes, quiches, as well as lightly aged regional cheeses such as Comté.

Serving and cellaring

To fully appreciate this wine, it is recommended to serve it at a temperature between 10 and 12°C. It can be enjoyed now, but also has ageing potential that will allow it to rest in the cellar until around 2028.

The elegance and freshness of a Burgundy Chardonnay

The estate

Founded in 1859 in Beaune, Maison Louis Jadot is a true institution in Burgundy. Both a négociant and a landowner, it looks after an extensive vineyard of more than one hundred hectares spread across prestigious terroirs. Since 1985, the estate has belonged to the Kopf family, through the Kobrand group, while retaining its strong local roots. Today led by Thomas Seiter, the company stands out for its strong environmental commitment and its mastery of ageing thanks to its own cooperage, thereby offering wines that remain faithful to their origins.

The vineyard

The grapes used for this cuvée come mainly from carefully selected plots in the Côte Chalonnaise and the Mâconnais, more southerly sectors of Burgundy. These terroirs yield healthy fruit that combines fine ripeness with preserved acidity.

Winemaking and ageing

The berries are transported to a vat room specifically dedicated to this purpose in Givry, where they undergo traditional vinification. The process continues with ageing lasting eight to ten months. This takes place partly in stainless steel tanks to preserve the fruity vivacity, and partly in oak barrels from the estate's own cooperage, thus bringing structure and roundness to the final blend.
