Tasting

Appearance
This wine reveals a pale yellow hue with greenish highlights, enhanced by a beautiful brilliance and crystal-clear limpidity.

Nose
The bouquet opens on aromas of fresh citrus fruits, such as lemon and lime, accompanied by notes of green apple and white fruits. Subtle floral touches and a minerality reminiscent of gunflint round out the whole.

Palate
The attack is lively and dominated by citrus, giving way to a fuller mid-palate with flavours of white fruits, supported by a slightly creamy texture. The finish, of beautiful length, stands out for its mineral tension and a hint of bitterness reminiscent of lemon zest.

Food and wine pairings

This white wine pairs ideally with seafood such as oysters or langoustines, as well as with grilled white-fleshed fish or ceviche. It also goes very well with fresh goat's cheese or Burgundian specialities such as snails in parsley butter.

Serving and cellaring

For an optimal tasting experience, it is recommended to serve this wine at a temperature of around 11 to 12 °C. Enjoyable from its youth, it can also be cellared and enjoyed until around 2030.

The estate

Founded in 1859 in Beaune, the Louis Jadot House is a major player in Burgundy. Both an estate owner and a négociant-éleveur, it holds around 213 hectares of vineyards. Today chaired by Pierre-Henry Gagey, the estate stands out for its commitment to sustainable and environmentally friendly viticulture. Under the technical direction of Frédéric Barnier, Louis Jadot strives to craft wines that faithfully reflect the diversity and purity of Burgundy's climats.

The vineyard

The Climat Les Vaillons is located to the south-west of the village of Chablis, on the left bank of the Serein. This terroir benefits from a southern and south-eastern exposure, promoting optimal ripening of the grapes. The vines thrive on Kimmeridgian soils typical of the region, composed of marl, limestone and marine fossils. Vineyard management relies on sustainable practices, including ploughing, cover cropping and the preservation of biodiversity, in order to ensure soil health and the typicity of the fruit.

The vintage

The 2022 vintage is characterised by warm climatic conditions in Burgundy. Despite these high summer temperatures, careful management of harvest dates made it possible to pick grapes displaying full maturity while retaining a lovely freshness and structuring acidity.

Winemaking and aging

The crafting of this cru favours aromatic purity. Fermentation and aging take place mainly in stainless steel tanks or in used barrels, so as not to mask the identity of the terroir with woody notes. The wine then benefits from aging on lees, bringing complexity and a delicate texture.
