It will also enhance feathered or furred game, such as woodcock or wild boar served with red berries, before concluding the tasting with a fine, creamy cheese like Brillat-Savarin.

The estate
Officially founded in 1797, Maison Louis Latour is a true institution in Burgundy. Now led by Florent Latour, this historic family estate watches over an exceptional 48-hectare vineyard, the majority of which is classified as Grand Cru. The only Burgundian estate to own its own cooperage, it stands out for its artisanal expertise and its long-standing commitment to sustainable viticulture. This world-renowned name embodies excellence and independence, perpetuating a unique winemaking heritage through wines that express all the richness of the region's finest terroirs.
The vineyard
The Climat "Les Chatelots" is nestled in the heart of the Chambolle-Musigny appellation, in the prestigious Côte de Nuits. This renowned terroir lies on shallow clay-limestone soils derived from Jurassic rocks, which ensure excellent drainage while retaining water at depth. The vines, with an average age of 35 years, are cultivated with controlled yields of around 35 hl/ha. These unique geological conditions give rise to wines of great finesse, particularly fragrant and elegant.
The vintage
2014 proved to be an exceptional year for the region, offering ideal weather conditions for the vines. Despite a few hailstorms early in the season and variable rainfall during July and August, the berries developed thick skins that effectively protected them from rot. The growing cycle ended with excellent grape ripeness, ensuring a healthy and high-quality harvest.
Winemaking and ageing
After hand-harvesting, the berries destined for the Chambolle-Musigny 1er Cru "Les Chatelots" 2014 undergo traditional fermentation in open vats, followed by full malolactic fermentation (100%). The wine is then carefully aged for 10 to 12 months. This ageing takes place in medium-toasted French oak barrels, 40% of which are new, all meticulously crafted by the estate's own cooperage.
