Tasting
Colour
A brilliant, luminous ruby red colour, wonderfully transparent, reflecting a beautiful energy.
Nose
The bouquet opens with great freshness, revealing aromas of red berries such as strawberry, blackcurrant and cherry. Aeration releases delicate herbaceous notes and a floral profile marked by violet and rose.
Palate
The palate reveals a structure of great elegance, carried by a crystalline acidity. The red fruit notes perceived on the nose reappear, complemented by nuances of lychee, sweet spices, liquorice and a subtle smoky touch. The tannic structure is delicate, leading to a refreshing and subtly mineral finish.
Food and Wine Pairing
This red wine from Italy shines through its versatility. It pairs wonderfully with Mediterranean dishes such as pasta with fresh tomato sauce, traditional pizzas or roasted vegetables. It also elevates grilled meats, roasted poultry, and charcuterie platters.
Service and Storage
The SP68 Rosso 2023 can be fully enjoyed in its youth for its vibrancy, but will continue to evolve favourably until around 2028. It is recommended to serve it at a temperature between 14 and 16°C.
The Authentic Expression of a Red Wine from Sicily by the Arianna Occhipinti Estate
The Estate
Officially founded in 2004, Arianna Occhipinti's estate now spans 22 hectares in southeastern Sicily. A true figurehead of environmentally responsible viticulture, the estate's current owner, Arianna Occhipinti, has succeeded in imposing her vision of artisanal, authentic production. Rejecting industrial standards, she cultivates her vines according to biodynamic principles, allowing her terroir to express itself fully. The estate has thus become an essential reference for wine lovers in search of sincere and vibrant wines.
The Vineyard
Located in the Vittoria region of Sicily, the vineyard enjoys an ideal location in a breezy valley between the sea and Mount Etna. The vines, aged between 15 and 20 years, are planted at an altitude of 280 metres on soils composed of red sands and a mineral-rich limestone substrate. Grown without irrigation and with a density of 6,000 vines per hectare, they develop deep root systems, ensuring controlled yields and a high concentration in the berries.
Winemaking and Aging
The hand-harvesting of the SP68 Rosso 2023 takes place between late September and early October. After light destemming, fermentation begins spontaneously thanks to indigenous yeasts in concrete vats. A skin maceration of 15 to 25 days allows the structure and aromas to be extracted. The wine is then aged on the lees in these same vats for six months, without any filtration, before resting for an additional month in bottle.
