Description
Pascal Jolivet releases a fine and concentrated Pouilly-Fumé white wine
The estate
In 1987, Pascal Jolivet, a former agent for the Pommery champagne house, founded his own estate in Sancerre. Since the production of his first vintage in 1991, Pascal Jolivet has progressively developed his estate until he now looks after a 95 hectare vineyard spread between Pouilly-Fumé, Touraine, Sancerre and Pouilly-sur-Loire.
The vineyard
Les Terres Blanches 2019 from Pascal Jolivet is a Pouilly-Fumé wine that stems from a plot selection of 6.5 hectares of vines located in the hamlet of Bouchat, north-east of the village of Pouilly sur Loire. This historic terroir of the appellation rests on white clay-limestone earth, from which the wine takes its name.
Winemaking and ageing
After the harvests, the grapes were manually sorted. Fermentation with the aid of indigenous yeasts in temperature-controlled vats.
