Tasting
Appearance
This wine displays a magnificent golden yellow colour with a particularly bright sheen.
Nose
The aromatic bouquet reveals subtle notes of redcurrants and green herbs, harmoniously complemented by delicate floral touches. The whole is underpinned by a highly distinctive minerality, evoking crushed stone and flint.
Palate
Feminine and wonderfully elegant, the palate offers perfect balance. It unfolds an intensely fruity texture in which flavours of crisp green fruits, bell pepper and a lovely grapefruit-like acidity intermingle. The finely chiselled minerality guides the tasting towards a powerful, clean and dry finish, enhanced by indulgent aromas of candied lemon.
Food and wine pairings
Ideal as an aperitif, this cuvée pairs wonderfully with a seafood platter, shellfish or fish, whether raw as tartare or cooked, such as trout or pan-seared tuna. It will also brilliantly accompany vegetarian dishes, seafood pasta, spicy Asian recipes or simply toasts topped with fresh goat cheese.
Serving and cellaring
To fully appreciate the finesse of this Sancerre 2025, it is recommended to serve it at a temperature of 10°C. Endowed with excellent potential, this wine can be enjoyed until approximately 2035.
The mineral elegance of a great Sancerre by Pascal Jolivet
The estate
Founded in 1987, the Pascal Jolivet House is a leading figure in the Loire Valley. The estate covers 120 hectares spread between Sancerre and Pouilly-Fumé, supplemented by 60 hectares in Touraine. To this day, Pascal Jolivet remains the owner and head winemaker, ensuring the authenticity and philosophy of the estate. This internationally renowned property stands out for its approach favouring elegance, finesse and the pure expression of terroirs, thereby establishing itself as a major reference in the region.
The vineyard
The grapes for this signature cuvée come from carefully selected plots in the communes of Bué, Verdigny, Saint-Satur and Sainte-Gemme, in the heart of the Sancerre appellation. This exceptional terroir is composed of a mosaic of unique soils, with 50% limestone, 30% clay-limestone and 20% flint, lending the wine all its complexity and mineral identity.
Winemaking and aging
Upon their arrival at the cellar, the berries destined for this Sancerre 2025 are rigorously sorted. The winemaking process is carried out by gravity to respect the natural flow of the must. After a gentle pressing, only the free-run juice and the heart of the press are retained. Each grape origin is vinified separately in temperature-controlled stainless steel tanks. To preserve freshness and the pure expression of the terroir, no oak barrel ageing is used. The wine then benefits from approximately six months of ageing on lees with regular bâtonnage to gain in roundness.
