Tasting notes
Appearance
This white wine displays a remarkably limpid robe.
Nose
The bouquet reveals sublime complexity, the fruit of its ageing on the lees. It gives off seductive aromas of dried fruit, pear and honey, harmoniously complemented by floral notes of acacia and delightfully indulgent touches of sweet almond and toasted hazelnut.
Palate
The attack is powerful and mouthwatering, introducing a dense, vertical and crystalline texture. Carried by remarkable tension, the palate stretches into a long finish of striking mineral purity, underscored by a lovely salinity.
Food and wine pairing
This cuvée pairs wonderfully with a mature Comté served with a walnut and fig chutney, and will also elevate white meats in a creamy sauce, delicate fish or even seafood.
Serving and cellaring
For optimal enjoyment, we recommend serving Le Noyer Savagnin 2024 at a temperature of 11 to 12°C, decanting it for about 45 minutes while it is young. This wine, with excellent ageing potential, can be enjoyed from 2026 and will be at its best until around 2038.

The estate
Born into the thirteenth generation of a distinguished winemaking family, Pierre Girardin founded his own estate in 2017, at the age of 19. Based in Meursault, France, the estate draws on a prestigious heritage to cultivate approximately 6.5 hectares in Burgundy and 6.2 hectares in the Jura. Pierre Girardin, the current owner, stands out for his exacting approach, focused on parcel-by-parcel vinification and a perfect mastery of reduction. His cuvées, renowned for their precision, make him one of the most compelling rising stars of the wine world.
The vineyard
The grapes come from the village of Rotalier, in the southern Revermont. The vines, some of which are very old, thrive at altitudes of 300 to 470 metres on soils of blue marl and limestone. Farmed under organic conversion, they benefit from high trellising and wide spacing to promote berry concentration. As the vinification takes place in Burgundy, this cuvée bears the designation Vin de France.
Vinification and ageing
After hand harvesting, Le Noyer Savagnin 2024 is vinified in Meursault using a Burgundian "ouillé" (topped-up) approach, which prevents the development of an oxidative veil. It is aged for an extended period on the lees in Chassin demi-muids, allowing the wine to develop its aromatic complexity while preserving exceptional purity.
