The Defaix family has been winemakers from one generation to the next for four centuries. The family owns one of the oldest domains of Chablis, established on the oldest land of the area. There, Pontigny monks selected, already 1000 years ago, the best parcel to produce white wines. Today, Daniel-Etienne Defaix follows in the age old family tradition with the same standards and passion. The 28-hectar Chardonnay vineyard is still maintained traditionally: meticulous caring of the vines yields high quality grapes. Daniel-Etienne Defaix magnificent wines draw their aromas from the unique soil composition: marl, limestone-clay, and fossil oysters.
