Tasting

Color
A deep golden amber hue, marked by thick, slow-moving legs that trickle gradually down the side of the glass, testament to its organoleptic richness.

Nose
The nose is pronounced and well-structured, opening with notes of burnt sugar, light brown butter and black pepper. It then evolves toward aromas of tobacco, walnut, toasted marshmallow and creamy vanilla, rounded out by touches of dried fruit, ripe banana, delicate herbs and subtle citrus.

Palate
The palate builds progressively with elegant lightness. It opens with a balanced honeyed sweetness, offset by herbal notes and a touch of light licorice. The palate then reveals complex flavors of toasted wood, deep caramel and lingering citrus. The alcohol is remarkably well integrated, offering a smooth texture. The finish is long and concentrated, dominated by tobacco and walnut, closing on nuances of caramel, burnt sugar and vanilla.

Food and Wine Pairing
This spirit is best enjoyed at room temperature in a tulip-shaped glass or a snifter, allowing its volatile aromas to fully concentrate. It pairs perfectly with fine grilled meat, a complex aged cheese or a premium cigar, whose smoky tobacco notes will echo those of the rum. For sweeter pairings, opt for dried fruits (apricots, figs, raisins), dark chocolate desserts, toasted nuts or vanilla pastries. The ideal time to savor it is in the evening, after dinner, in a calm setting conducive to sensory appreciation.

Mixology
As an exceptional spirit, it is highly recommended to enjoy it neat or with a minimal amount of ice. Using it in complex cocktails would risk masking the subtle nuances and complexity acquired during its long aging at altitude.

Its modernized and certified production facilities draw on a protected 260-hectare nature reserve that supplies exceptionally pure spring water. The Gran Reserva Especial 15 Years Old is the result of a unique production process that defies traditional tropical conventions. This exceptional rum is built on a meticulous blend of distillates aged between eight and seventeen years. Unlike mass-market production, the master rum blender strategically selects and combines these different ages to build an organoleptic profile of optimal complexity.

The fundamental raw material of this amber rum lies in its interaction with wood. The company uses exclusively barrels made from native Colombian white oak, sourced from its own protected forests. This endemic wood, with its specific porosity, allows for a slower and more regulated micro-oxygenation than classic American oak.

Aging takes place at extreme altitude, where the constant average temperature of 16°C considerably slows the chemical interaction between the spirit and the barrel. This measured mountain maturation limits evaporation and prevents aggressive tannin extraction. The result is a harmonious integration and remarkable finesse, propelling this expression among the most award-winning spirits internationally.
