Tasting

Nose
Rich, nuanced and highly expressive. Juniper is prominent, enhanced by spicy notes, ginger and lemongrass. It also reveals a pleasant bouquet of white flowers, white stone fruits and a distinctive vinous signature.

Palate
The attack is fresh, botanical and fruity, dominated by juniper with a hint of spice. The mid-palate is supple and complex, offering aromas of white stone fruits and a beautiful vinous roundness. The finish is long, refined and lingering.

Food pairings and tasting moments
This spirit is best enjoyed neat, well chilled (between 8 and 10 °C) or on the rocks, to fully appreciate its aromatic complexity. It is a perfect fit for the aperitif thanks to its botanical freshness, but its vinous roundness and long finish also make it an excellent choice for tasting at the end of a meal.

Mixology
Thanks to its highly expressive aromatics, it enhances classic cocktails. It is perfect for crafting an elegant gin and tonic, or for use in traditional recipes such as the negroni, where its vinous nobility and roundness add an extra dimension without being overshadowed by the other ingredients.

A Burgundian gin of great elegance

The Sab's distillery: the excellence of French Gin in Burgundy
Founded in 2018 in Beaune, in the heart of Burgundy, the independent artisanal distillery Sab's – Alambic Bourguignon is run by its current owner, Mathieu Sabbagh. A former executive in the spirits industry, he revived the local tradition by acquiring a mobile steam still. Today, the distillery travels from village to village to distil as close as possible to the harvests, perpetuating the ancestral know-how of the bouilleurs de cru. With Sab's, Mathieu Sabbagh offers an exceptional French gin, a true bridge between Burgundy's winemaking heritage and the world of modern mixology, while embracing a virtuous approach to recycling raw materials.

The Gin: crafting and singularity of a winemaker's gin
Far removed from traditional gin, this spirit stands out for its deep roots in the winemaking terroir. Sab's gin is crafted from a French grain alcohol in which juniper berries — including Burgundian juniper — and fourteen other aromatic plants are macerated. The true singularity of this French gin lies in the addition of Chardonnay and Pinot Noir eaux-de-vie from Burgundy, which give it its remarkable aromatic signature.
The maceration is then steam-distilled in a small copper still, a gentle method that preserves the finesse and integrity of the botanical aromas. After distillation, the spirit rests for a minimum of three months in stainless steel tanks to harmonise its components without altering its purity. Finally, to underline its premium and artisanal positioning, each bottle is sealed by hand with an elegant wax capsule.
