The producer
The history of the beautiful Vincent Girardin house began in 1980. Vincent Girardin was born into a family that had been winemakers since the 17th century. At the age of 19, he began producing wine with the two hectares of vines that he had inherited from his parents. A winemaker at heart and a passionate one at that, Vincent Girardin quickly made a name for himself among the great names of the Côte de Beaune. Founded in 1992, the Vincent Girardin house has since become one of the finest references among great Burgundy wine. Since 2000, the talented Eric Germain has been following in Vincent Girardin's footsteps, passionately revealing the exceptional Premiers Crus and Grands Crus terroirs around Meursault and Puligny-Montrachet.
The vineyard
Vincent Girardin's 2013 Chassagne-Montrachet 1er cru "Clos du Cailleret" comes from the eponymous vineyard located in the south of the Côte de Beaune. The vines are 40 years old on average and are planted on stony, clay-limestone soil.
The vinification and ageing
The grapes are harvested by hand and then vinified in whole bunches. The juice is extracted at low pressure, followed by 24 to 36 hours of static settling at low temperature. Alcoholic and malolactic fermentation in barrels (of which around 25% are new), as well as the 18-month ageing period with stirring of lees. Blending is carried out one month before bottling. Slight filtration before bottling.
