The estate
Passionate and constantly striving for innovation, Bibi Graetz has become an emblematic producer over the years. His wines continue to seduce wine lovers from all over the world due to their harmonious and unique portrayal of the most beautiful Tuscan terroirs.
Bibi Graetz's unique wines are composed of old vineyards made up of an array of typical Italian grape varieties that produce fine wine (Sangiovese, Canaiolo, Colorino, Ansonica).
The wine
The "Colore" wine is dear to Bibi Graetz as it marks the fulfilment of one of his dreams. This Tuscan wine is made from old vineyards, some of which are 80 years old. Poised on the top of hills and resting on very rocky soils, the vines are between 250 and 600 metres above sea level.
The grapes come from 3 historical vineyards (Lamole, Vincigliata, Siena) to which a new terroir, Olmo, has been added, which, due to its location on the slopes at an altitude of 420 metres, confers an exquisite freshness. In order to harvest the grapes at optimum maturity, up to 8 successive selections were carried out during the harvest in each of these vineyards.
The vintage
A mild winter preceded a spring marked by rainy spells before flowering. The hot and dry conditions during the summer were offset by cool nights, which preserved the acidity and aromatic structure of the grapes. The rainfall before the harvest is ideal and ensured an optimal ripeness of the grapes.
Vinification and ageing
Following the manual harvest, the grapes are sorted in the new winery in the commune of Fiesole before being destemmed. Slow pressing and vinification in open barrels. Natural fermentation with indigenous yeasts along with 6 to 8 manual punchings of the cap and pumping over per day for around 2 weeks. Pre-fermentation maceration for one week. Malolactic fermentation in barrels followed by 20 months of parcel ageing before the final blend.
