Tasting
Appearance
This white wine displays a pale yellow hue with golden highlights, enhanced by a dazzling brilliance and an exceptionally fine mousse.
Nose
The aromatic bouquet opens with notes of white and stone fruits such as peach, mirabelle plum and pear, alongside citrus. A pronounced minerality reminiscent of damp chalk and flint mingles with subtle hints of spice, brioche and dried fruits.
Palate
The attack is lively and precise, driven by a refreshing tension. The elegant texture combines ripe fruit with a straight acidity, supported by a delicate salinity. The long finish lingers on citrus aromas and a harmonious mineral backbone.
Food and wine pairings
This wine pairs perfectly with seafood, oysters or white fish, whether served as a tartare or grilled. It also enhances delicate poultry, white meats in cream sauce and soft cheeses such as Brie or Camembert.
Serving and cellaring
For optimal enjoyment, Cuvée 749 non-vintage is best served at a temperature between 8 and 10°C. This wine has excellent ageing potential and can be enjoyed until around 2037.
The pure expression of a great Champagne terroir by Maison Jacquesson
The estate
Founded in 1798 in Châlons-sur-Marne, Maison Jacquesson quickly made its mark on the history of Champagne, becoming one of Emperor Napoleon's favourites. Now based in Dizy, the house embraces a true winegrower's spirit centred on excellence and on showcasing its terroirs. Now wholly owned by Artémis Domaines, the estate carries on its heritage under the leadership of Jean Garandeau. With a vineyard of around thirty hectares, the house favours an artisanal approach, controlled yields and oak vinification to craft wines of remarkable precision.
The vineyard
The vines stretch across two emblematic areas of Champagne: the Grande Vallée de la Marne and the Côte des Blancs. The plots, located in grand cru and premier cru sites such as Aÿ, Dizy, Avize and Oiry, lie on outcropping Campanian chalk soils. The semi-continental climate, combined with varied exposures, promotes optimal ripening while preserving fine acidity. Vineyard management aims to limit vigour through short pruning, cover cropping or ploughing, and the use of predominantly organic treatments.
The blend
Although this is a non-vintage wine, the blend is built predominantly around the 2021 harvest. That year was marked by a dry winter, a frost-hit spring and a stormy summer, before a milder end to the season made it possible to achieve a fine balance. To enrich this base, 28% reserve wines from previous cuvées (from 743 to 748, with the exception of 745) complete the blend, bringing depth and complexity.
Vinification and ageing
Cuvée 749 non-vintage is fermented and aged exclusively in large oak foudres. This method allows for gentle micro-oxygenation without marking the aromatic profile. The wine then rests on its lees for several years, with neither fining nor filtration, in order to preserve its natural texture before being disgorged with a very low dosage.
