Tasting
Colour
An intense golden hue unfolds, enhanced by a few pink highlights, the discreet signature of the Pinot Noir that makes up this cuvée entirely.
Nose
The nose opens on a delicate floral register, led by notes of violet and acacia blossom, before giving way to aromas of ripe fruit such as apricot, strawberry and morello cherry.
Palate
The attack is full and generous, animated by flavours of wild berries, leading to a fresh, elegant finish punctuated by spicy touches of aniseed and liquorice.
Food and Wine Pairing
This Blanc de Noirs 2021 pairs beautifully with poultry slowly simmered with dried fruits and gentle spices, as well as with terrines and foie gras, whose richness and unctuousness it highlights with its freshness.

The Estate
Founded in 1910 by Auguste and Pierre Philipponnat, the House of Philipponnat is based in Mareuil-sur-Aÿ, in the heart of Champagne. It farms around twenty hectares of Premiers and Grands Crus, complemented by partnerships with local growers. Led today by Charles Philipponnat, the House draws on the Clos des Goisses, its emblematic monopole, and on a long-standing commitment to sustainable, certified organic viticulture.
The Vineyard
The Blanc de Noirs draws its grapes from the sunlit slopes of the Grande Vallée de la Marne, around Mareuil-sur-Aÿ, as well as from Grand Cru plots located north of the Montagne de Reims, an exceptional terroir in Champagne. These Pinot Noir vines grow on chalky soils, farmed according to demanding principles: exclusively organic fertilisation, mechanical weeding, cover crops and biocontrol treatments, with no use of insecticides for more than thirty years.
Vinification and Ageing
Only the first pressing, the cuvée, is retained to produce the Blanc de Noirs 2021, after static settling of the musts. Part of the blend, between 20 and 40%, ferments in old barrels, with the remainder vinified in tank, while malolactic fermentation is decided on a case-by-case basis depending on the lots. The wine is then aged on its lees for over five years before disgorgement, then dosed as Extra Brut.

This Champagne is made from 100% Pinot Noir, sourced exclusively from the House's Premier and Grand Cru plots.
