Description
Characteristics and Tasting Tips for the Poulsard 2025 from Domaine Rolet
Tasting
Colour
This wine displays a very pale red colour, with garnet or pale ruby hues, occasionally tinged with orange reflections, typical of the finesse of the Poulsard grape variety.
Nose
The nose reveals delicate aromas of small red fruits such as strawberry, raspberry and morello cherry, lifted by spicy notes of white pepper and a few floral, even slightly earthy touches.
Palate
The palate is light yet well defined, carried by fine tannins and a tangy freshness, leading to a harmonious finish with lingering fruit.
Food and Wine Pairing
This wine pairs beautifully with Jura charcuterie, in particular smoked sausage or a country terrine, but also with white meats, mushroom-based dishes, and mountain specialities such as fondue or raclette.
Serving and Cellaring
The Poulsard 2025 from Domaine Rolet is best enjoyed slightly chilled, between 13 and 15°C, served in a wide glass that allows its aromas to express themselves fully.
A Red Arbois of Pure Character, True to the Identity of Poulsard at Domaine Rolet
The Estate
Founded in 1942 in Arbois, in the Jura, Domaine Rolet grew over the decades under the leadership of the Rolet family before being taken over in 2018 by a trio of families, Devillard, Flambert and Dupuis, who run it today. With 65 hectares spread across the four major Jura appellations, the estate takes great pride in showcasing native grape varieties such as Poulsard, Savagnin and Trousseau, with an approach that combines family tradition and environmental commitment.
The Vineyard
Domaine Rolet's Poulsard vines are planted in Montigny-lès-Arsures, within the Arbois appellation, on plots located at the foot of the slopes. The soils consist of clayey silts covering Lias marls, a terroir well suited to the delicate expression of this thin-skinned grape variety. The vineyard, managed using sustainable viticulture and undergoing conversion to organic farming since 2021, also benefits from old vines that bring greater depth and complexity to the grapes.
Vinification and Ageing
For the production of the Poulsard 2025, the grapes are hand-harvested, then carefully sorted before being completely destemmed. Vinification relies on indigenous yeasts and a maceration in tank lasting several days, encouraging a gentle extraction that respects the fruit. Ageing then continues in tank or large oak vats for about twelve months, in order to preserve the aromatic purity characteristic of this grape variety.
