Characteristics and tasting tips for the Antique Amontillado by Fernando de Castilla
Tasting
Appearance

The nose is punchy and aromatic, with a striking intensity that immediately invites you to taste.
Palate
The palate is enveloping and dry, with elegant notes of almond. A lovely tension carries it through to a long retronasal finish.

Antique Amontillado is a delightful partner for charcuterie, nuts, white meats and cheeses, and suits both relaxed and refined occasions.
Serving and cellaring
Serve Antique Amontillado between 12 and 16°C to reveal the full complexity of its bouquet.
An exceptional Amontillado born from the Andalusian soleras of Jerez
The estate
The Fernando de Castilla brand was founded in 1972 in Jerez de la Frontera, Andalusia, by Don Fernando Andrada-Vanderwilde, whose aim was excellence. Since 1999, the bodega has been owned by Jan Pettersen, a Norwegian with a passion for the wines of Jerez. He revived its identity by focusing on very high-quality Sherries, made from old soleras with minimal intervention. This artisanal approach and centuries of know-how have earned the house a strong reputation among lovers of authentic Sherry.
The vineyard
The grapes for this wine come from the Jerez-Xérès-Sherry appellation. They grow on albariza soils, the white limestone marls typical of the region, which allow the Palomino Fino grapes to ripen slowly and evenly.
Winemaking and ageing
Antique Amontillado first undergoes more than five years of biological ageing (crianza) under a veil of flor. It is then given a long period of oxidative ageing in the traditional soleras y criaderas system, until it reaches an average age of around twenty years.
Grape variety
This Spanish fortified wine is made from 100% Palomino Fino, the signature grape variety of the Jerez region.
