Tasting

Color

An aromatic bouquet rich in nuances, where vibrant citrus notes, essences of stone fruit, and delicate floral scents intertwine gracefully. Hawthorn blends with original botanical touches of polypody and anise, creating an olfactory profile that is both fresh and complex.

Palate
From the outset, the wine reveals a broad and dynamic generosity, sustained by a remarkably precise mineral structure. Its finish is marked by exceptional aromatic persistence that extends the tasting experience.

Food and Wine Pairings

A gourmet pairing with John Dory gently cooked at low temperature, accompanied by a refined cucumber mousseline—both crisp and silky—and enlivened by a butter scented with anise seeds.

Serving and Cellaring

Ideal serving temperature between 10 and 12 °C. This wine has an impressive cellaring potential, able to evolve until 2030, allowing a progressive development and enrichment of its aromas.

The Freshness and Structure of a Rhône Valley White Wine

The Estate

Rooted since 1808 in Tain-l'Hermitage, the Maison M. Chapoutier established itself as a family estate in 1897. Today led by Michel Chapoutier and his daughter Mathilde, this emblematic house adopted biodynamics as early as the 1980s. A pioneer with its Braille labels since 1996, it has expanded its international reach while preserving its Rhône identity on prestigious appellations.

The Vineyard

Resulting from a creative collaboration between M. Chapoutier and chef Anne-Sophie Pic, this wine comes from the lieu-dit "Payrolles" in the Saint-Péray appellation. Its high-altitude granite soils offer a distinctive minerality that allows marsanne to fully reveal its personality and the richness of the northern Rhône terroir.

Winemaking and Aging

An artisanal and respectful approach: manual harvesting, whole-cluster pressing. Fermentation takes place in barrels at a precise temperature of 17 °C, using indigenous yeasts that preserve the authenticity of the terroir. Maturation for 10 to 12 months in 600-liter demi-muids adds structure and depth without altering the wine’s original fruit expression.
