Tasting

Color
A sumptuous color ranging from deep golden amber to reddish brown, testament to its long maturation. The spirit reveals a light unctuousness, forming delicate yet persistent legs on the sides of the glass.

Nose
The first impression reveals gentle waves of deep cocoa, toasted almond biscuits and rich honey. After a few minutes of aeration, the sherry influence awakens with notes of dried figs, black tea, cherry liqueur and polished leather, subtly wrapped in a delicate saline breeze and a very discreet hint of smoke in the background. Adding a few drops of water releases aromas of demerara sugar, nutmeg and saffron.

Palate
The attack is a true explosion of sherry influence: raisins, dried apricots, velvety caramel and warm bread intermingle. The texture turns voluptuous, generous and slightly waxy. The palate then evolves towards warming spices, revealing candied ginger, white pepper, clove and nutmeg, underpinned by deep notes of old wooden furniture. The medium-length finish lingers on a comforting spicy warmth, chocolatey touches and a persistent tingling sensation.

Pairing and Tasting Moments

This celebratory spirit calls for a patient and thoughtful tasting. Take the time to let it breathe and nose it regularly to fully grasp its evolution. It pairs beautifully with aged semi-hard cheeses such as Comté or Manchego, as well as mild blue cheeses like Gorgonzola Dolce. On the sweet side, it enhances dark chocolate desserts, walnut tarts or spiced cakes. For the more adventurous, it will wonderfully accompany delicately braised meats, such as duck or veal chuck served with a red fruit or mushroom reduction.

Mixology

This exceptional spirit is traditionally regarded as a sipping whisky. We highly recommend enjoying it neat, or with the careful addition of a few drops of demineralized water to release its most hidden aromas.

Other Characteristics

Bottled at 46.3% ABV, this whisky stands out for its unpeated profile (although a faint residual smoky trace may sometimes be perceived depending on the batch). True to the distillery's philosophy, it is produced without cold filtration and without any added coloring, thus preserving the full integrity of its aromatic profile.

Founded in 1881 on the north-eastern coast of the island of Islay, the Bunnahabhain distillery (meaning "mouth of the river" in Gaelic) draws its spring water from the River Margadale. Equipped with the tallest copper stills on the island, fitted with extremely elongated swan necks, it produces a spirit of rare elegance. This Andalusian influence, stemming from the traditional solera system, imbues the wood with deep flavors that are slowly transferred to the spirit over the decades spent in warehouses swept by the sea air of the North Atlantic.
