The vineyard
Almutia by Xavier Vignon is a white Châteauneuf-du-Pape wine made from vineyards located in the west of the appellation on limestone soils.
The wine
"Almutia", the name of this wine refers to the Latin name of an ‘’aumusse’’ or amice, a piece of cloth that was used by religious people as a cloak in the Middle Ages.
Vinification and ageing
Harvesting is deliberately early (mid-August). Destemming and crushing before vatting. Draining is followed by a long settling for several days in order to settle the pigments. Fermentation in stainless steel tanks only, without stirring in order to preserve a pleasant acidity.
The blend
This wine is the result of a subtle blend of black and white grape varieties, but also of a multi-vintage blend in order to develop the complexity of this wine.
Grenache (40%)
Syrah (5%)
Mourvèdre (25%)
Roussanne (10%)
White Grenache (10%)
Grenache Gris (10%).
