A direct version, offering boysenberry and blackberry purée notes laced with licorice and applewood accents. The fleshy, open-knit finish shows a toasty edge but stays balanced. Merlot, Cabernet Franc and Cabernet Sauvignon. Drink now through 2030.

Cherries and blackcurrants, quite strong aromatically. Liquorice, slate, blueberries, vanilla and floral scents. Nicely juicy and plump, lots of energy here with focus and precision. I like the fun side of things, this has a confidence about it, full of flavour and texture — a chalky and stony grip, but with well-integrated wood. The Cabernet Franc is giving lots of great floral scents and some spicy backbone to the wine. Lots of freshness but there’s underlying power here too. Quite a serious wine, it’s not light at all, very accomplished. A true introduction to the grand vin here. Suggest waiting a few years but actually it’s got a lot to offer right now. Ends stony and mineral.

The 2021 Arômes de Pavie has a mixture of red and black fruit, wilted iris flower and violet, more floral than some of the other cuvées under Gérard Perse's umbrella, with just a touch of pencil shavings. The palate is medium-bodied with a sapid, licorice-tinged entry, grainy texture and just a little dryness on the finish.

Quite floral from the initial sniff of the perfume, you also find notes of espresso, cherries and spice in the nose. Medium-bodied, fresh, vibrant, and chalky, there is a nice spicy quality to red fruits, with additional nuances of cocoa, and licorice in the finish that make this already quite nice to enjoy. Aromes de Pavie is no longer the second wine of Pavie. All of the fruit come from a specific 11 hectare parcel, so readers should consider this as a different expression of St. Emilion than Pavie. The wine blends 50% Merlot and 50% Cabernet Franc. Drink from 2024-2037.

Coming all from limestone soils and equal parts Merlot and Cabernet Franc that was brought up in 50% new French oak, the 2021 Aromes De Pavie sports a solid ruby/plum hue as well as a medium to full-bodied, deep, seamless profile in its riper, mostly red fruits, crushed stone, graphite, and floral-laced aromas and flavors. With beautifully integrated oak, ripe, velvety tannins, and a brilliant finish, this is a legit, serious, gorgeous wine. It's probably the best second wine in the vintage. Drink bottles over the coming 15 years.

It shows the austerity of the vintage, and this is a more serious Arômes than in many years, but the gourmet personality is lurking within, and it opens nicely on the palate, offering bright fruits, fennel, and bitter chocolate, of good quality. Harvested 7–9 October. No chaptalisation. 34.72 hl/ha.

The 2021 Aromes de Pavie is a blend of 50% Merlot and 50% Cabernet Franc and it has a deep garnet-purple color. It leaps with exuberant scents of potpourri, fallen leaves, Morello cherries, and raspberry coulis, giving way to a core of juicy plums and aniseed, plus a hint of lavender. The medium-bodied palate is bright and refreshing, with grainy tannins supporting the crunchy red fruit flavors, finishing with a skip in its step.

Slender and airy in style, Arômes de Pavie is surprisingly open. It reveals notes of black berries and plums, along with nuances of gingerbread and malt. Complexity is definitely on display. With juicy tannins and a lively structure, the wine shows a certain density and, above all, tension. It brims with energy and calls for further development. Lovely length.

The nose offers intensity, a certain power, a lovely fine grain, depth, and an attractive approach. It reveals notes of vibrant blackberry and cherry, and, more subtly, cornflower, combined with touches of fresh/vibrant blue fruits, along with discreet hints of graphite and a subtle touch of tonka bean. The palate is beautifully fresh and elegant, offering juiciness, brightness, lovely definition, roundness, volume, and a delightful bright/fresh/juicy fruit character. On the palate, this wine expresses notes of vibrant cherry and strawberry and, more lightly, blackcurrant, combined with touches of violet and lilac, grey pepper, as well as discreet hints of tobacco, fresh almond, and a subtle, almost fresh-chocolate note. Beautiful freshness, energy, and indulgence. A lovely handling of bitterness that brings pep.

Description

A Saint-Emilion wine with an alluringly delicate and aromatic expression

The estate

The origins of this property date back many years. The vines were cultivated on the slopes of what is now Château Pavie as early as the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, 1er Grand Cru Classé "A", has one of the most beautiful terroirs of Saint-Émilion. Château Pavie is renowned for the structure and elegance of its wines.

Arômes de Pavie became the name of Château de Pavie’s Second Wine in 2005, following that of Château Tour Simard.

The vineyard

Arômes de Pavie 2021 is a Saint-Emilion wine made from vines that are mostly less than 10 years old and from plots that do not fit into the estate’s First Wine. With an average age of 52 years, the 13.5-hectare vineyard is located on the southeast side of the Saint-Emilion hill, on a "plateau" of clay-limestone soil over asteroid limestone. Particular attention is paid to the vineyard, such as pruning adjusted to the age of each vine, green harvest and leaf-stripping.

Vinification and ageing

Grape harvest from October 7th to 9th. Vinification in temperature-controlled wooden vats. Malolactic fermentation in barrels, as well as ageing in 50% new barrels and 50% second-fill barrels.

The blend

Arômes de Pavie 2021 comprises a bend of Merlot (50%) and Cabernet Franc (50%).
