The Estate
Founded in 1986 by Éric Dhondt and Édith Grellet, this family estate is located in Flavigny, at the heart of the Côte des Blancs in Champagne. Since 2012, their son Adrien Dhondt has overseen winemaking and strategy for this roughly six-hectare property. Named Champagne Winemaker of the Year in 2017, he brings a vision inspired by Burgundy, focused on precise terroir expression and artisanal viticulture. Alongside the historic estate, Adrien Dhondt also produces highly sought-after single-parcel micro-cuvées under his own name, aimed at discerning enthusiasts.
The Vineyard
Sourced from the Oger Grand Cru in Champagne, this cuvée comes exclusively from the Les Plantes d'Oger site. This parcel of old vines lies on the mid-slope, on very deep chalk soils with an east-facing orientation. The vineyard is farmed according to biodynamic principles, with deliberately limited yields to concentrate the fruit and fully express the mineral purity of this chalky terroir.
Winemaking and Ageing
The production of Les Plantes d'Oger Blanc de Blancs 2021 follows a precise, minimal-intervention philosophy. Fermentation occurs spontaneously with indigenous yeasts, mainly in Burgundy-style barrels. The wine is then carefully aged on fine lees, enhancing its texture and complexity. Malolactic fermentation is carried out to soften the natural acidity, followed by extended ageing on laths and disgorgement with a minimal dosage.
