The estate

Founded in 1818 by Elisabeth Salmon and Nicolas-François Billecart, the Billecart-Salmon Champagne House has remained a family-owned and independent business. For seven generations, it has upheld its expertise and exacting standards across its cuvées.

The vineyard

Stretching over nearly 100 hectares, the Billecart-Salmon vineyard extends from the Côte des Blancs to the Montagne de Reims. The vines are farmed using traditional methods to preserve the authenticity of the fruit and reflect the richness of the Champagne terroir.

An exceptional duo in a single gift set

The “Rendez-Vous” cuvées are the result of a precise, innovative, and bold approach that showcases an exceptional terroir and a unique Champagne grape variety, combined with a meticulous and demanding winemaking art.

Today, the Billecart-Salmon Champagne House invites you to discover two exceptional cuvées from the same base year (2018) and the same grape variety (Pinot Meunier): Les Rendez-Vous de Billecart-Salmon No. 7 and No. 8.

Les Rendez-Vous de Billecart-Salmon No. 7

Crafted exclusively from the terroir of Venteuil, on the right bank of the Marne, this cuvée is vinified in tanks before aging on lees in the cellar for 63 months. Its dosage is 3.5 g/L.

This Champagne displays a bright straw-yellow hue with silvery highlights and a delicate effervescence. The nose reveals a refined floral bouquet, blending linden blossom and zesty citrus, with a subtle touch of plum and fruitcake. On the palate, it delights with indulgent flavors of cherry in syrup, fresh pear, and pomegranate, leading to a vibrant, saline-accented, tangy finish. A sensory experience that is both elegant and refreshing.

Serve between 50 and 54°F (10–12°C); this Champagne pairs beautifully with clam risotto with tips of green asparagus, or a flaky chestnut brioche.



Les Rendez-Vous de Billecart-Salmon No. 8

A pure and authentic expression of the limestone terroir of Leuvrigny, this cuvée, dosed at 3.5 g/L, is vinified in tanks before aging for 63 months.

Beneath a luminous golden-yellow sheen with silvery highlights, this Champagne reveals a floral, gourmet nose, marrying white flowers and cereal notes, before deepening with nuances of pome fruits and sourdough bread. On the palate, saline creaminess mingles with the zesty freshness of mango, redcurrant, and pomelo, while a thirst-quenching finish with hints of white cherry and shortbread prolongs the experience. Veal pie with foie gras or gougères with aged Comté make for delicate pairings and a uniquely refined tasting experience.
