Tasting

Appearance
The appearance showcases an intense gold with amber nuances, enhanced by a fine and persistent effervescence.

Nose
Powerful and expressive, the bouquet reveals ripe fruits such as juicy pear, Mirabelle plum, and sour cherry, accompanied by notes of brioche and fresh butter. Praline aromas evolve into spicy and slightly toasted nuances, with subtle hints of cocoa and white pepper.

Palate
Full and generous, the palate seduces with its velvety texture, combining power and freshness. Crisp red fruits harmonize with toasted and subtly woody notes, offering remarkable complexity and a long finish with accents of dried fruits and fine spices.

Food and wine pairing

This Champagne pairs perfectly with roasted poultry with wild mushrooms, truffle risotto, or beef fillet with caramelized shallots. It also elevates matured cheeses such as a 24-month aged Comté or a Tomme de Savoie.

The Producer

Founded in Épernay in 1834 by Auguste Boizel and Julie Martin, Champagne Boizel remains a family-run estate, today managed by Florent and Lionel Roques-Boizel, representing the sixth generation. Located on the UNESCO-listed Avenue de Champagne, it stands out for its historical innovations, including the creation of the first Blanc de Blancs in 1929 and the Joyau de France cuvée in 1961.

The Vineyard

The Tours-sur-Marne terroir extends over 52 hectares of clay-limestone soils with a high chalk content. Located at an altitude of 90 to 180 meters with a south-east exposure, this Grand Cru Champagne benefits from exceptional conditions for the expression of the Pinot Noir grape.

Winemaking and ageing

The vinification of this Blanc de Noirs takes place entirely in stainless steel tanks, preserving the aromatic purity of the grape variety. Five years of ageing on the lees gives this cuvée its remarkable complexity and depth. The dosage is 3.5 g/L.
