The estate
The Cossy house has been growing vines in the Montagne de Reims since 1764. In the 1950s, the family decided to produce and market its own champagnes rather than selling its grapes to the major houses. Today, Sophie Cossy runs the family estate, which spans around seven hectares across thirty-four plots located mainly in Jouy-lès-Reims, classified Premier Cru. She took over operations at just twenty-five following the death of her father, Francis. Under her leadership, the estate has committed to an ambitious environmental approach with HVE and VDC certifications, while developing a champagne style that favors terroir expression and minimal dosage.
The vineyard
The vines for the Sophistiquée Extra Brut 2015 are planted in the Montagne de Reims, on chalk and clay soils characteristic of this Champagne region. The plots benefit from hillside exposures that encourage sunlight and grape ripening. The vineyard, certified for sustainable viticulture, is managed with deep respect for the environment: natural grass cover between the rows, preservation of hedgerows to promote biodiversity, and maximum reduction of chemical inputs. This approach allows the soil to breathe naturally and enables the vines to draw their expression from this exceptional chalky terroir of Champagne.
The vintage
The 2015 vintage in Champagne was marked by contrasting weather conditions. After a mild winter, a freezing spring was followed by a prolonged heatwave from mid-May to mid-August, with exceptional sunshine and episodes of drought. These particular conditions produced grapes of sufficient quality to justify making a vintage champagne.
Winemaking and aging
The Sophistiquée Extra Brut 2015 was produced using the traditional Champagne method. The 2015 base wines were complemented by a selection of reserve wines from 2014 and 2013, enhancing the blend’s complexity. The champagne benefited from extended aging on lees, developing aromatic depth and refined bubbles. The minimal dosage of 4 to 5 g/L reflects the house philosophy of prioritizing the terroir’s natural expression.
