Tasting
Color
This wine reveals a pale golden hue, flecked with delicate green highlights. Its effervescence displays great finesse, forming a persistent and particularly elegant string of bubbles.
Nose
The bouquet opens with crisp orchard fruit aromas such as green apple, pear and quince, underscored by notes of honey, warm biscuits and dried white flowers. With aeration, subtle hints of brioche and almond emerge, along with a fine chalky minerality.
Palate
Both structured and refined, the palate offers a generous texture carried by vibrant acidity. Flavors of ripe citrus, white peach and discreet red fruit come through, all supported by a mineral backbone and a touch of spice. The finish is long and persistent, lingering on notes of citrus zest, chalk and brioche.
Food and Wine Pairing
This cuvée pairs wonderfully with seafood in rich sauces, such as scallops or lobster bisque. It also enhances roasted poultry, meaty fish like salmon or tuna, as well as soft-ripened or pressed cooked cheeses.
Service and Storage
The Premier Cru Brut Blanc de Noirs NM is best served between 8°C and 10°C, ideally in tulip-shaped glasses to concentrate its aromas. With excellent aging potential, this wine can be enjoyed until around 2035.

This Champagne has a dosage of 5 g/L. Its alcohol content is 12.5%, with total acidity between 9.0 and 9.5 g/L and a pH of around 3.1 to 3.2.
The Elegance of a Great Champagne by Gonet-Medeville
The Estate
Founded in 2000, the Gonet-Medeville house was born from the union of Xavier Gonet, heir to a long line of winegrowers, and his wife Julie Medeville. Located in Bisseuil, at the heart of the Champagne region, this 12-hectare family estate spans eight prestigious villages, including three classified as Grand Cru and five as Premier Cru. As grower-producers, the current owners, Xavier and Julie, oversee every stage of production. They stand out for their artisanal approach and their commitment to faithfully expressing the purity of their terroirs.
The Vineyard
The grapes used for this cuvée, under the Champagne 1er Cru Brut appellation, come from a 3-hectare vineyard located on the Bisseuil terroir. The south-facing vines thrive on predominantly chalky soils that ensure excellent drainage. The estate favors organic farming practices for these plots. The harvest is done by hand to select the finest bunches, with an average yield kept around 10,000 kg/ha.
The Blend
This non-vintage cuvée is crafted from a base harvest to which a small proportion of reserve wines is added. Some of these reserve wines have aged for up to five years, bringing remarkable complexity and consistency to the final blend.
Winemaking and Aging
The creation of the Premier Cru Brut Blanc de Noirs NM begins with gentle pressing and careful settling. Fermentation takes place for 30% at low temperature in temperature-controlled tanks, and for 70% in old oak barrels, with no malolactic fermentation in order to preserve freshness. The wine is bottled seven months after harvest. It then undergoes aging on the lees for 36 months, followed by a minimum rest period of 4 months after disgorgement before release.
