Tasting
Color
A beautiful bright pale yellow color with slight green reflections.
Nose
The spring-like nose is dominated by aromas of reinette apple and lemon, complemented by delicate notes of vanilla and lily of the valley. Upon aeration, the bouquet evolves towards lactic and smoky sensations that enrich its aromatic complexity.
Palate
The attack on the palate is supple and tender, revealing a fleshy character. The flavors of white fruits unfold harmoniously before mineral notes (chalk) appear in the middle of the mouth, bringing firmness to the whole. The salinity and acidity blend perfectly, offering a remarkable balance that extends to a long finish where the salinity is fully expressed, accompanied by a lemony touch.

This Coteaux Champenois pairs ideally with natural seafood and shellfish, grilled fish as well as fresh goat cheeses. Its minerality and freshness make it a perfect companion for delicate seafood dishes.

Serve at 10°C. This wine can be kept until around 2027, although its tasting is already very pleasant today.

The property
Since 1764, the Cossy family has been cultivating vines in Jouy-lès-Reims, a Premier Cru terroir of the Montagne de Reims, and has been marketing its champagne since the 1950s. Today, Sophie Cossy, supported by her mother Geneviève, runs the estate with an approach combining tradition and innovation. The vineyards also extend to Pargny-lès-Reims, influencing the aromatic profiles with their limestone soils. Sophie stands out for her "feminine touch" in the blends, and her champagnes are renowned for their elegance and finesse.
The vineyard
This Coteaux Champenois comes from two specific plots located in Pargny-les-Reims: Les Ecus and Les Monts Coupes. These terroirs benefit from a predominantly limestone soil that gives the wine its distinctive minerality and remarkable salinity. The exposure and composition of the soil allow the chardonnay to fully express its aromatic potential and natural freshness.
Vinification and aging
The Coteaux Blanc 2022 Sophie Cossy benefits from a careful aging of 15 months in 500-liter demi-muid. This traditional method allows an optimal exchange between the wine and the wood, bringing structure and complexity without masking the fruity character and natural minerality of the chardonnay. This aging process contributes to the remarkable balance between freshness and roundness that characterizes this cuvée.
