The Estate

Founded in 1995, Domaine Jean-Baptiste Senat spans around fifteen hectares in the Languedoc. Now run by Jean-Baptiste and Charlotte Senat, this family estate stands out for its deep commitment to organic farming, certified since 2004, and a natural approach to viticulture. Located on the foothills of the Montagne Noire, the estate is renowned for its artisanal production, which favours an authentic expression of terroir. The owners continue to practise minimal-intervention methods, establishing their vineyard as a key reference for lovers of natural wine in the south of France.

The Vineyard

The vines flourish across the communes of Trausse and La Livinière, benefiting from a Mediterranean climate tempered by cool winds from the Montagne Noire. The soils consist of a mosaic of clay-limestone and rolled pebble terraces. Cultivated without synthetic chemicals, the vineyard is home to old vines trained in the gobelet method, some of which reach forty years of age for the white varieties. Yields are deliberately kept low, and harvesting is carried out by hand to ensure optimal quality for this wine classified as IGP Aude.

The Vintage

Mediterranean climatic conditions, marked by hot, dry summers and mild winters, favoured a natural concentration in the berries. The growing cycle allowed the grapes to reach ideal physiological ripeness while retaining fine acidity, resulting in a hand harvest that concluded at the end of March 2025.

Winemaking and Ageing

The making of the "Aux Amis de ma Soeur" 2024 is based on a minimalist philosophy in the cellar. Fermentation begins spontaneously through indigenous yeasts, with rigorous temperature control to preserve aromatic freshness. A moderate skin maceration is applied to add complexity. The wine is made without any fining or filtration, favouring purity of fruit and expression of terroir.
