The estate
The Ayala Champagne House was founded in 1860 by Edmond de Ayala and his wife. For generations, the members of the Ayala family have been committed to producing greatly elegant champagnes that are appreciated beyond borders, notably across the Channel, where Ayala has been the official supplier for the British crown. In 2005, the Ayala Champagne House was taken over by the family company Bollinger.
The wine
Exclusively produced during exceptional vintages and in limited quantities, this Blanc de Blancs 2010 by Ayala is produced from exceptional vintages in the Côte des Blancs in Champagne (Chouilly, Oiry, Cramant, Vertus).
Winemaking and ageing
The Blanc de Blancs 2010 by Ayala is subject to an ageing on lees for 6 years in the cellar. Its dosage is 6g/litre.

Tasting
Colour
The wine is a bright and beautiful white-gold colour. The effervescence is fine and persistent.
Nose
Subtle and precise, the nose mixes delicate fragrances of white flowers, citrus, clear honey and frangipane.
Palate
The palate seduces with its delicate alliance between balance and volume. Aromas of citrus zest and white flowers are combined a silky and airy texture up to a lingering, finely saline and iodised finish,
Food and wine pairings
Ideal as an aperitif, the Blanc de Blancs 2010 by Ayala goes perfectly with a Saint-Jacques scallop carpaccio with lemon caviar and basil, a turbot with white butter sauce or even lobster with vanilla sauce.
