Tasting Notes
Appearance
An intense golden hue, verging on light amber, enhanced by a fine and steady effervescence.
Nose
The aromatic bouquet reveals great complexity, exuding notes of candied orange peel and dried herbs, harmoniously rounded out by balsamic touches of menthol and liquorice.
Palate
The attack unveils a broad, rich and deep texture. The palate stands out for its remarkable tension and lively acidity, extending into a particularly persistent saline finish.

A Delicate and Expressive Champagne from Benoît Déhu
The Estate
Although the family's winemaking history dates back to 1787 in Fossoy, the Champagne House Benoît Déhu was officially founded in 2011. Today, Benoît Déhu heads this estate located in the western Marne Valley. He cultivates around four hectares of vines according to the principles of organic and biodynamic farming. This passionate winemaker stands out for his commitment to restoring pinot meunier to its rightful place, crafting highly precise single-parcel cuvées, vinified in wood with minimal intervention.
The Vineyard
This Champagne cuvée comes from a single plot known as Les Chaillots. This distinctive terroir rests on sandy, sandstone-rich soils that promote rapid drainage and excellent grape concentration. The old vines, planted around 1950, are meticulously farmed using organic and biodynamic methods, ensuring controlled yields and a pure expression of the terroir.
Winemaking and Ageing
The production of the non-vintage Les Chaillots V15 is marked by a minimal-intervention approach. Fermentation takes place using indigenous yeasts, entirely in oak casks made from wood sourced from the family's own forest. The wine is then aged on its lees for around ten months. No malolactic fermentation is carried out, in order to preserve the juice's natural tension. Finally, the wine undergoes a very long period of ageing on laths in bottle, spanning several years.
