The producer
Nicknamed "Boll" by the inhabitants of the Champagne region and "Bolly" by the English, the timeless and legendary Bollinger Champagne House is part of an exclusive group of great Champagne houses. Bollinger’s Champagne style is defined by the exemplary precision brought to each step of the winemaking process. Respecting traditions, riddling the bottles by hand, corking reserve magnum bottles, the last barrel maker in the Champagne region, their drive for excellence symbolises the whole culture of Champagne Bollinger since its creation in Aÿ in 1829. More than just an art, it is a heritage.
The vineyard
The Bollinger Champagne House stands out due to its 174 hectares split into seven main vineyards, 85% of which are Grands Crus and Premiers Crus, enabling the House to be one of the few Champagne Houses to produce its own grapes for its blends. Pinot Noir, the house's signature grape variety, constitutes 60% of the vineyard's total grape varieties.
The wine
A limited edition champagne in celebration of the saga’s 25th opus, Bollinger 007 Limited Edition 2011 is the house’s first champagne to be produced exclusively with Pinot Noir from Aÿ’s historical Grand Cru.
The vintage
An unusual year, 2011 is one of the best Champagne vintages: a mild spring, scarce rainfall that returned intermittently during the summer and the harvesting period, all provided the necessary conditions for Champagne wines to flourish.
The vinification and ageing
Fermented in oak barrels, allowing the wine to reveal its aromas, this exceptional champagne has benefited from ageing on lees, under cork for 7 years. The dosage is low (4g/L).
The blend
Bollinger 007 Limited Edition 2011 is a 100% Pinot Noir.
The tasting
Complex, powerful and harmonious are the key words to describe this champagne wine with its golden colour and copper highlights. It reveals aromas of stewed fruit in a rich, round mouthfeel, finishing with a mineral touch reminiscent of flint.
