Description
Characteristics and tasting tips for Thiénot's Immersion 2016 cuvée
Tasting
Appearance
The effervescence is marked by a fine, perfectly integrated bead, underscoring the elegance of this wine.
Nose
The bouquet reveals great aromatic purity, blending notes of citrus, white flowers and white-fleshed fruit, supported by a mineral, chalky dimension characteristic of its terroir.
Palate
The attack is fresh and lively, carried by a beautiful acidic tension. The mid-palate is full and silky, reflecting the richness of old vines. The whole offers great harmony between precision and depth, stretching into a long finish with tangy, mineral echoes.
Food and wine pairing
This grand cru pairs ideally with noble seafood such as oysters, scallop carpaccio or white fish sashimi. It is also wonderful with fine poached poultry, delicate vegetable dishes or hard cheeses such as a young Comté.
Serving and cellaring
To fully enjoy the Immersion 2016 cuvée, we recommend serving it at 9 to 11 degrees in a tulip-shaped glass. Taken from the House's wine library, this edition has benefited from long cellar ageing, giving it beautiful maturity while retaining excellent ageing potential.
The pure expression of a Côte des Blancs grand cru by Maison Thiénot
The estate
Officially founded in 1985 by former broker Alain Thiénot, who remains its owner today alongside his children Garance and Stanislas, the Champagne House Thiénot is located between Taissy and Reims. Independent and family-run, it stands out for its resolutely contemporary vision, refusing to look to the past in order to better face the future. Now recognised among the great names of the region, the estate combines a strong sense of place with an openly embraced modernity, offering cuvées of great precision under the guidance of its cellar master Nicolas Uriel.
The vineyard
The grapes behind this cuvée come exclusively from the Côte des Blancs, an essential terroir of Champagne. This exceptional terroir draws on the grand cru villages of Cramant and Oger. The vines, often old, thrive on predominantly chalky soils, giving the berries remarkable tension and minerality.
The vintage
The year 2016 was marked by particularly contrasting weather conditions. The growing cycle began with devastating spring frosts in April, followed by strong downy mildew pressure caused by persistent rains. Fortunately, a warm and mild August helped restart ripening. The harvest, carried out in mid-September, thus yielded healthy grapes of fine quality.
Vinification and ageing
Drawn from a meticulous selection within the House's wine library, the Immersion 2016 cuvée underwent long cellar ageing. This extended rest on the lees refines the effervescence and develops the wine's aromatic complexity before its release.
