Tasting

Colour
The colour reveals a transparent ruby hue of medium intensity, entirely representative of the grape variety's youth.

Nose
The nose opens with great elegance, revealing precise aromas of ripe cherries and dark forest fruits. It then evolves towards distinctive notes of cola and tar, underpinned by a mineral touch reminiscent of crushed chalk.

Palate
On the palate, the attack reveals a highly precise structure. The tannins, both fine and firm, are perfectly balanced by lively acidity. The mid-palate unfolds with warm, ripe fruit, enriched by subtle smoky touches, hints of walnut and a deep earthy character. The medium-bodied finish lingers with a pleasant mineral freshness.

Food and wine pairing

This red wine pairs beautifully with full-flavoured meats, such as roast duck or goose served with a mushroom or cherry sauce. It also enhances dishes based on wild mushrooms, fresh meat-filled pasta, as well as feathered game. When it comes to cheese, it pairs wonderfully with soft cheeses boasting well-developed flavours.

Service and storage

The Chassagne-Montrachet Village "Vieilles Vignes" 2023 reveals its full potential after a few years in the cellar. It will offer optimal drinking between five and eight years after the harvest, and can be cellared until around 2033.

The estate

Founded in 1920 by Arsène Amiot, Domaine Guy Amiot et Fils is a historic figure in the Burgundy region. Spanning twelve hectares, this family estate has managed to preserve its expertise through the decades. Today, the estate is run by Thierry Amiot, in charge of winemaking, joined by his daughter Héloïse Amiot, a fifth-generation representative and managing partner. The estate stands out for its respectful approach to tradition and its ability to express the full complexity of Burgundy's great terroirs.

The vineyard

The grapes for this cuvée come from around a dozen plots located on the lower slopes of the Chassagne-Montrachet appellation. Grown on clay-limestone soils, these forty-five-year-old vines benefit from an exposure ranging from north-east to south-west. This diversity of plantings, combined with the advanced age of the vines, allows for naturally limited yields, favouring a fine aromatic concentration in the berries.

The vintage

2023 was marked by complex weather conditions, including a highly localised hailstorm. The growing cycle required particular attention to strike the right balance between preserving natural acidity and achieving optimal phenolic ripeness, in a context where sugar concentration was rising rapidly.

Winemaking and ageing

For the Chassagne-Montrachet Village "Vieilles Vignes" 2023, the harvest is carried out by hand. The grapes are fully destemmed before undergoing a short cold maceration. Fermentation takes place in stainless steel tanks, accompanied by spontaneous malolactic fermentation. Ageing lasts twelve months, with two-thirds in stainless steel tanks and one-third in used French oak barrels. The blend is then combined in tank for a few additional months before bottling.
