Nose
Initially revealing roasted and cocoa notes, the nose of Dom Pérignon Vintage 2015 gradually opens up to a floral bouquet of linden, jasmine, and peony, unveiling a sublime spicy dimension. A vegetal and fruity freshness then emerges, with aromas of chlorophyll, orange peel, and green papaya.

Palate
On the palate, the champagne unfolds delicately at first, then generously. Fresh peach and nectarine flesh envelop notes of citrus and gentian, before lingering with remarkable length.

The estate

Named after the famous monk Pierre Pérignon, cellar master of the Abbey of Hautvillers in 1668, Dom Pérignon champagne symbolizes a rich heritage and an unrelenting quest for excellence. This visionary monk is often associated with the discovery of the méthode champenoise, a crucial milestone in the history of champagne. Dom Pérignon’s commitment to quality and innovation endures, embodied by its current Chef de Caves, Vincent Chaperon, who took over in 2019. The house’s philosophy, focused on expressing each vintage, reflects an ambition to create the “world’s best wine,” a goal that has been pursued since Dom Pierre Pérignon was appointed cellarer of the Abbey of Hautvillers.

Dom Pérignon pays tribute to the art of blending its champagnes with a special edition of Vintage 2015. A unique collection of bottles and gift boxes created with the rights holders of Jean-Michel Basquiat.

The vintage

After a mild winter, the year 2015 in Champagne was marked by many contrasts: a cold spring preceded a prolonged heatwave from mid-May to mid-August, featuring exceptional sunshine and periods of drought. The much-needed rains at the end of August allowed for optimal ripening, resulting in berries of remarkable generosity and balance.

Winemaking and aging

The winemaking process at Dom Pérignon strictly adheres to the principles of the méthode champenoise, with an unwavering commitment to faithfully representing the vintage. Extended aging in the cellar, far exceeding the appellation’s standards, allows the champagne to develop its complexity and aromatic depth.

Blending

This exceptional champagne is the result of a secret blend of chardonnay and pinot noir.
