Tasting

Nose
Opening with roasted and cocoa notes, the nose of Dom Pérignon Vintage 2015 gradually reveals a floral bouquet of linden, jasmine, and peony, unveiling a sublime spicy dimension. A fresh vegetal and fruity character then emerges, with aromas of chlorophyll, orange peel, and green papaya.

Palate
On the palate, the champagne unfolds delicately at first, then generously. The flesh of fresh peach and nectarine envelops notes of citrus and gentian, before lingering with remarkable length.

Serving

To fully appreciate Dom Pérignon Vintage 2015, it is recommended to serve it at a temperature between 8 and 10°C.

Pairings

Dom Pérignon Vintage 2015 pairs beautifully with a variety of refined dishes. It accompanies delicate fish, seafood, poultry, and fine cheeses.

An iconic champagne, delicate and complex

The estate

Named after the famous monk Pierre Pérignon, procurator of the Abbey of Hautvillers in 1668, Dom Pérignon champagne symbolizes a rich heritage and a relentless pursuit of excellence. This visionary monk is often credited with the discovery of the Champagne method, a milestone in the history of champagne. Dom Pérignon’s commitment to quality and innovation endures, embodied by its current Chef de Cave, Vincent Chaperon, who took the helm in 2019. The house’s philosophy, focused on expressing vintages, reflects an ambition to create the “best wine in the world”—a goal carried on since Dom Pierre Pérignon’s appointment as cellar master of the Abbey of Hautvillers.

The wine

Dom Pérignon pays tribute to the art of blending its champagnes with a special edition of the Vintage 2015. A unique collection of bottles and gift boxes created in collaboration with the estate of Jean-Michel Basquiat.

The vintage

After a mild winter, the year 2015 in Champagne was marked by many contrasts: a chilly spring preceded a prolonged heatwave from mid-May to mid-August, with exceptional sunshine and periods of drought. Life-saving rains at the end of August allowed for optimal ripening, resulting in berries of remarkable generosity and balance.

Winemaking and aging

The winemaking process at Dom Pérignon strictly follows the principles of the Champagne method, with an unwavering commitment to faithfully representing the vintage. Extended maturation in the cellar—much longer than the appellation standards—allows the champagne to develop its complexity and aromatic depth.

Blending

This exceptional champagne is the result of a secret blend of chardonnay and pinot noir.
