Nose
Initially revealing roasted and cocoa notes, the nose of Dom Pérignon Vintage 2015 gradually opens up to a floral bouquet of linden, jasmine, and peony, unveiling a sublime spicy dimension. A fresh vegetal and fruity character then emerges, with aromas of chlorophyll, orange peel, and green papaya.
Palate
On the palate, the champagne unfolds delicately at first, then generously. The flesh of fresh peach and nectarine envelops notes of citrus and gentian, before extending into a remarkable finish.

This visionary monk is often associated with the discovery of the traditional Champagne method, a crucial milestone in the history of champagne. Dom Pérignon’s commitment to quality and innovation endures, embodied by its current Cellar Master, Vincent Chaperon, who took up the mantle in 2019. The house’s philosophy, focused on expressing vintages, reflects an ambition to create the “best wine in the world,” a goal upheld since the appointment of Dom Pierre Pérignon as cellarer of the Abbey of Hautvillers.

The vintage
After a mild winter, the year 2015 in Champagne was marked by many contrasts: a cold spring preceded a prolonged heatwave from mid-May to mid-August, with exceptional sunshine and periods of drought. The life-saving rains at the end of August allowed for optimal ripening, revealing berries of remarkable generosity and balance.
Winemaking and aging
The winemaking process at Dom Pérignon strictly adheres to the principles of the traditional Champagne method, with an absolute commitment to faithfully representing the vintage. Prolonged aging in the cellar, a resting period far exceeding the standards of the appellation, allows the champagne to develop its complexity and aromatic depth.
Blending
This exceptional champagne is the result of a secret blend of chardonnay and pinot noir.
